Is it possible to disable the album art in the notification?

there is not. The album art just acts as the "icon" that the notification uses

Is there a way to disable the extended album art notification? It appears to only appear sometimes. Maybe it is based on the number of notifications?

there is no disable option.
Extended notifications show when its the top notification.. you can shrink and expand the notification as well
"Expanded layouts
With Jelly Bean you have the option to provide more event detail. You can use this to show the first few lines of a message or show a larger image preview. This provides the user with additional context, and - in some cases - may allow the user to read a message in its entirety. The user can pinch-zoom or two-finger glide in order to toggle between base and expanded layouts. For single event notifications, Android provides two expanded layout templates (text and image) for you to re-use in your application."

I can't seem to get pinch-zoom or two-finger glide to work. Do those apply to ongoing notifications?

yes it applies to ongoing.
What device do you have? HTC changed the gestures used, to expand you have to pinch zoom out to expand (2 fingers close to start.. then move them away from each other)
motorola and samsung seem to use the defaults. Pinch zoom in to collapse the notification and a single finger drag down on the notification to expand it. Im not sure which devices use the 2 finger swipe down to expand

I'm on a Samsung Galaxy Note 2. Single finger drag doesn't seem to work on anything. Pinching allowed me to expand and collapse some Gmail notifications. Anything I try on GMMP just pops up the App Info menu.

What app info?
I only have the s3 and s2 to test with and they work how i described.. so im not sure how expanded notifications are supposed to work on the note 2
I dont control how the notifications acts, Just give the system 2 layouts.. a big and small one and then the rest is handled by the android OS

I will search around for issues specific to the Note 2. Are you able to not specify a big layout?
